"Papua has Lake Sentani as a tourist destination, for its culinary, Sentani also has many types, mainly related to sago. So in addition to foods made from sago, such as papeda, sago porridge, baked sago, and sago cake." Naftali said.

In addition they also have sago worms that have a delicious taste image. According to Naftali, the people in Abar village are ready to serve sago worms that are processed by roasting or being eaten directly in the Papuan PON event later.

"Sago caterpillars are consumed by the Sentani people, both raw and processed by burning. Fresh sago caterpillars are just taken from the sago tree trunk, have a savory flavor and a little sago-scented. When bitten, from the stomach the sago caterpillar will release a liquid that has a sweet and savory taste, "explained Naftali.

In addition to the diverse culinary, said Naftali, tourist visitors and participants of PON Papua can also process their own food made from sago. "Visiting Sentani, don't just look for the culinary. But also see how it is processed. With experience on how to process it, our culinary experience will feel complete, "he explained.

Papua Archeology Institute researcher, Hari Suroto, explained that sago caterpillars are a favorite culinary since pre-history, archaeological findings in the form of earthenware fragments at sites in the Lake Sentani region prove that humans in prehistoric times had processed sago-based culinary.

This sago caterpillar is actually a Rhynchophorus ferrugineus weevil larvae. Sago caterpillars contain protein but most are fat. Sago caterpillars are an additional menu for Papuan coastal communities, because these caterpillars will not be found all the time. "For 100 grams of sago caterpillar, it contains 181 calories with 6.1 grams of protein and 13.1 grams of fat," Hari said.

Regarding the special culinary that will be served for PON XX Papua guests in 2020, said Hari, sago caterpillars need to be processed creatively and varied. So that it is expected to eliminate or can reduce disgust for those who have never eaten it.

Hari hopes that the relevant regional government needs to conduct training for the mothers (women or mothers) of the Sentani community to be able to present more contemporary sago worms. This training can invite the chief of a hotel or restaurant, or it can also involve the Papua Jungle Chief community.
